Pain de Campagne - French Country Sourdough

I created this loaf with a classic ham and Swiss cheese sandwich in mind. The interior has a custard-like texture with a crispy outer crust. Made of mostly organic hard red wheat and a dash of red fife for good measure. Typical white bread has nothing on this!
 
Ingredients: Organic sifted hard red wheat, organic whole grain red fife, filtered water, sourdough starter, sea salt, rice flour for dusting
